Horseradish - Tips and uses for horseradish

Make your own fresh horseradish sauce - it will be far better than anything you can buy at the supermarket.

To make the sauce, just scrub and peel the roots and puree them in a blender or food processor. Don't be tempted to put your nose over the blender to smell the horseradish-the aroma is so strong that it will make your eyes water? Add 1-2 tablespoons of white vinegar for every 1oz/30g of horseradish. Season with salt and add a little sugar. Keep in a covered jar in the refrigerator. Make a creamy sauce by adding as much puree as suits your own personal taste to ¼ pint/150ml whipped cream.

You can grow your own horseradish. But beware: the plant is very invasive. To keep it from taking over your garden, enclose its bed with bricks or sheet metal to a depth of at least 12in/300mm, or grow horseradish in a tub.
