If you're out of milk and need some for baking, try using the same amount of fruit juice. It works surprisingly well for many quick breads and cakes. Or use yoghurt (add ½ teaspoon bicarbonate of soda per 8fl oz/225ml). If you use skimmed milk, add 2 teaspoons of vegetable oil or melted butter per 8fl oz/225ml.
Milk in cartons picks up refrigerator smells. Close the carton flaps tightly or transfer the milk to a covered jug.
If milk starts to go sour, salvage it for use in cake mixtures and scones. Sour milk also makes a good substitute for buttermilk in recipes which require it.
