Do you need a second job to make ends meet? You'll have more enthusiasm for moonlighting if your part-time job is built on your hobbies or interests.
Try to find work you can do in your own time, perhaps even at home. Some possibilities: selling, fund-raising or conducting surveys over the phone; babysitting; selling cosmetics or home products; tutoring or giving lessons; teaching a course at a community college or trade school; selling property; proofreading; word processing on your home computer; bookkeeping for a local company; grooming or walking pets; growing plants; running a bed-and-breakfast guesthouse.
Check with your employer first. If there's no conflict of interest, you're not legally or ethically obliged to tell your boss about your outside activities - but he'll probably appreciate your honesty. And some firms forbid employees to freelance, particularly for competitors.
