Keep mushrooms from becoming mouldy or mushy during storage by leaving them unwashed. Wrap them loosely in paper towels, refrigerate in paper bags and use quickly.
Slicing mushrooms is easy if you use an egg slicer. Place the mushroom downwards so that the slicer cuts the rounded side of the cap. The fresher the mushrooms are, the firmer they are, and the better this method works.
A rule of thumb when using tinned mushrooms: a 6oz/175g tin equals 4oz/115g of fresh mushrooms.
Keep dried mushrooms in the store cupboard. You can buy them at larger supermarkets, and are excellent for adding to last-minute meals.
