ANY food will readily turn to human fat if you eat it in excess. It only seems like animal fat does this more easily because it is generally more calorie-dense than a lot of foods. Limiting your intake of saturated fats is sensible, but not because it "readily turns into human fat".

You are correct to stay away for processed white sugars. The natural sugar, fructose, is fine and is found in fruits. But to just try to eat foods low in fat is not necessarily the best approach to losing fat. Having an overall low fat intake can help but you should still eat some foods with moderate fat. For instance fatty fish such as salmon contains the essential omega 3 and 6 fatty acids. Nuts are also a good souce of protein that have relitively high fat content. you just have to eat in moderation.
