Fish Casserole. Recipe for Fish Casserole

This is a very tasty recipe, but like most of my recipes, I don't know the exact quantities of the ingredients that I use !! Anyway, I will do my best.

You will need:-

  • 4 small skinned fillets of cod or haddock
  • 400g tin of plum tomatoes
  • 1 onion, diced
  • 200g of strong grated Cheddar cheese or cheese of choice
  • Salt and pepper 

Into the casserole dish, spread out half the diced onion. 
Lay the fish on top.
Season to taste
Spread over the rest of the diced onion.
Place the tinned tomatoes, chopped into small pieces, around the edge of the casserole including the juice,then fill the the can with water and add this to the pan.
Spread the grated cheese over the top, cover with casserole lid and bake in the oven at Gas mark 4 for about an hour and a half.

Serve with boiled rice or potatoes.

Adjust the amount of the cheese and the onion to your taste. ( I like it cheesy )

It is a very filling dish, but oh so good.
