Beef and Ham Loaf. Recipe for Beef and Ham Loaf

This is another handed down the family recipe.

You will need the following for this recipe:-

  • 1lb. stewing beef
  • 1/2lb. gammon ham
  • 1 cupful breadcrumbs
  • 1 small onion cut fine
  • 1/2 tablespoon dried sage
  • 1 dessertspoon brown sauce
  • 2 beaten eggs
  • 1 level teaspoon salt
  • 4 dashes of pepper.

Remove all the fat from the beef and the fat and rind from the ham, then mince them quite finely. A food processor can be used.
Mix both meat and ham together and add the breadcrumbs.
When it is evenly mixed, add the rest of the ingredients and continue to mix by hand until it is well amalgamated.

Place the mixture in a greased 2lb. bowl, cover with greased greaseproof paper, then cover with a larger sheet of greaseproof paper and tie this in place with string round the bowl.
Place in a large pan. Fill with water till it comes to about 2/3rds of the way up the bowl.
Bring to the boil and simmer for three and a half hours.
Don't forget to check the pan periodically and top up the water as needed.

When almost cold, turn out the loaf onto a plate, cover and leave to go cold.

You now have a very tasty meat loaf which can be sliced for sandwiches, or eat it with vegetables as a meal.
