This is a delicious and easy to prepare potato pie.
1 kg potatoes
1/2 cup oil
Salt + pepper
Grate the raw potatoes and onion on a fine grater by hand or in the food processor. Mix in the egg and oil, and season to taste. You can double or treble the quantities as you wish but keep the proportions the same.
When it's all mixed, put in a lined baking dish, it should be about 1.5 inches high, and bake at 180 C (about 350 F) for 1 1/4 hours, depending on your oven. The top goes nice and brown, the middle is pretty moist.
