Cream of Broccoli Soup. Recipe for Cream of Broccoli Soup

If you like broccoli, try this soup. It's quick, easy, can be made ahead of time.
1 big bunch fresh broccoli (or 2 small ones)
2 cans (l4 oz size) chicken broth
8 oz heavy cream
Parmesan cheese (optional)
Trim, peel, and roughly chop broccoli stalks. Along with florets, simmer (covered) in chicken broth until soft. Cool a bit then mash broccoli with a potato masher. Do this right in the pot, broth and all. Stir in the cream, reheat slowly, be careful not to let it boil.
Pass grated Parmesan at the table to sprinkle on top.
