Salt substitute. Make your own Salt substitute

If you are looking for an alternative to salt then this recipe may well be the answer. Use this recipe in place of table salt. You can make your own dried orange and lemon peel by stringing strips onto a piece of string and hanging them up in the kitchen. When quite dry, they can be ground in an electric grinder. Citric acid can be bought at chemists/drug stores.

To make about 1 oz/45g

  • 4 level teaspoons cream of tartar
  • 1 level tablespoon each of garlic granules, dried and ground orange peel, arrowroot and sugar
  • 2 level tablespoons each of black pepper, celery seasoning and onion powder
  • 1 level teaspoons citric acid 1 level teaspoon each of white pepper, dill weed and dried thyme, crumbled
  • Dried, ground rind of one lemon
  • 1 level teaspoon cayenne pepper

Put all the ingredients in a small electric spice grinder, coffee grinder or blender. Grind for 10 seconds or until the mixture is fine. With a funnel, transfer the salt substitute into a glass saltshaker. Store any that4 floz/115ml is left over in a tightly covered container and keep in a cool, dark, dry place.
