Fruit cake. Quick and easy fruit cake

This cake is just so quick and easy to make.

You need:-

  • 12ozs. mixed fruit
  • 4ozs. sugar
  • 4ozs. margarine 
  • 1/4 pint of milk
  • 1 beaten egg
  • 8ozs. flour

Simmer fruit, sugar and margarine in a pan for 20 mins.

When cold, add the beaten egg and flour.

Put in a cake tin and place in pre-heated oven Gas mark 2 ... electric 300 F, or electric 150 C
Bake for one and a half to 2 hours.

Enjoy.

Theres a similar recipe on the be-ro website, which uses water instead of milk, and the water goes in with the fruit to simmer, so I'd say this was probably the same.

I used a 7" round tin, and as with most cakes, self raising flour. I didnt simmer for 20 minutes prior to baking though, just long enough for butter to melt. I added milk with egg and flour and also a spoonful of mixed spices. Really moist and tasty cake. However, it wont keep for long ... will be eaten within hours.

ive doubled this reciepe and put mine in loaf tins plus added nuts and cinnamon,but ive that much had to use a third tin.easy peasy.

Well i made the cake and added the milk together with egg and flour then realized that i had added 12oz flour but to my surprise it turned out well we ate it with a drizzle of brandy and a dollop of cream also eaten with custard WOW!!!

I used half and half, self raising and plain, doubled all the ingredients and made a beautiful xmas cake for the famiy,,once cooked sprinkle a good orange liquer on the top..(it will soak through) then ice with a light icing/marzipan cover..

thank you so much! im having a christmas party on christmas day and i wanted to have a specail treat! i have never ever tasted fruitcake because some ppl say its nasty and some say its great. im gonna stick with the its great oinion and try it out myself! i cant wait...

I make this one every 2 weeks, hubby loves it, add 2 tsp mixed spice and chopped cherries, for the xmas taste, sprinkle sugar on top just before cooking..MMmmmmm yummmmm

Put milk in with fruit, used SR flour, put sugar on the top as suggested. It was an amazing cake. Just about to make another one.

GONNA TRY ADDING DIFFERENT FRUIT NEXT TIME,CHOPPED APRICOT,DATES ,APPLE, WILL ADD THESE AT THE END OF SIMMER STAGE TO AVOID THEM BREAKING UP AND FINALLY SOME CHOPPED WALNUTS.

Adding dates makes it a moist toffee like taste,lovely, but half the fruit, mixed fruit, if adding dates etc.. but adding apple adds sweetness and liquid when apple breaks down so decrease sugar if adding apple..never add milk and flour before the fruit mixture has cooled down or the flour will begin to cook before adding to oven, drying the cake out too much before cooking.

As the title says - can I add sherry? If so can someone please explain when and how much etc.,

Yes, I personally think you could add sherry, but add it after adding flour, then bake ...dont add it while simmering on the cooker as the sherry may go acidic and sharp.. I have made one for xmas, added chopped cherries , looks fantastic, looks like a shop bought cake but tastes a lot better...lol..
